Blueberrys onion's preserve
- Ingredients:
- - 1 tablespoon butter
- - 1 red onion minced
- - 1 cup fresh or frozen blueberrys
- - 1/2 cup white wine
- - 1/4 cup sugar
- - 1 bay leave
- - 1 pinch thyme and rosemary
- - Salt and pepper to taste
In a sauce pan, melted butter and cook onion medium heat until tender.
Add blueberrys and cook 2 minutes.
Deglaze with wine and let reduce half liquid.
Add sugar, bay leave, thyme and rosemary.
Cook until onion caramelize and liquid is nearly evaporate.
Season to taste and let cool.
Serve with poultry's "mousse" or other "paté" of your choise on toast or for appetizer.
